I actually have a cousin that went to U. of S. Australia to physiotherapy studies. I can't say I know a darn thing about it, but she seemed to enjoy it there. Hopefully, someone else can be of more help to you... Good luck in making your decision!

I am having trouble deciding on which university to attend/apply for to study physiotherapy.
My current options, so far, are Curtin University, University of South Australia, and Monash University.
Among the 3, which is the best place to pursue a degree in physiotherapy?
Also, is there a physiotherapy ranking that ranks all the Australian universities?

there is no ranking.
I believe the curriculum of all Australian universities is very similar so it's only a personal choice which uni you prefer.

I have heard Monash University is good, plus their cirruculum is good. Rest is your personal choice. You need to ask people studying there and then make a choice.
